【澳門美食網報導】屢獲殊榮的新濠天地中菜行政總廚譚國鋒於2010年7月23日(星期五)至8月15日(星期日)期間為饕客帶來一系列夏日清新消暑的精緻美饌,以精心細選的蓮花入饌,並為每位饕客免費送上有益身心之醒胃清心蓮花茶。在餐飲界累積超過25年深厚經驗的譚師傅,通曉中藥結合古代道家廚藝的膳食製作方法,以蓮花不同部份入饌,相信能為一眾饕客清熱消暑,平衡身心。
中國人把蓮花視作美的化身。蓮花亦是詩人墨客經常描寫的優雅和純潔對象,因為蓮花出污泥而不染,象徵士子清高的風骨,故蓮花又被視為「君子之花」。
譚師傅精心炮製消暑解熱之蓮花盛宴美饌包括:松露油拌藕絲、荷香白玉藏錦繡、荷葉蒸和牛臉頰及原隻鮑魚鮮荷葉籠仔蒸雞等。

From Friday, July 23 to Sunday, August 15, 2010, award winning Chef Tam Kwok-fung, Executive Chinese Chef at City of Dreams introduces a refreshing summer menu featuring invigorating lotus floral served with complementary lotus tea that is not just igniting your appetite but potentially beneficial to good health and a sharp mind.
Honed over 25-year of experience of Chinese cooking, Chef Tam is widely recognized for his in-depth understanding of how Chinese medicine can be interwoven with ancient Taoist culinary techniques. Chef Tam has synergized lotus properties into one menu which are believed to cool the internal system and preserve the body ‘s balance.

Lotus is regarded by the Chinese as the symbol of beauty and grace. It has long been exalted by scholars and artists for its elegance and purity. Though emerged from mud, the lotus flower has a uniquely dignified posture, giving it to be known as "The Flower of the Gentleman".
For centuries the Chinese have resourcefully adapted the lotus plant into their diet. Chefs have created elegant cuisines with its roots, leaves, and flowers as essential ingredients. The use of the lotus flower and leaf for tea infusion is popular refreshment for summer to cool the internal system. Lotus tea properties are believed to help in dilating blood vessels, thereby, lowering blood pressure to cool and alleviate stress for a calming constitution.
