【澳門美食網報導】澳門新濠鋒殿堂級中菜食府帝影樓誠邀「中國國家名廚」李耀雲烹飪大師來澳,於6月11日至20日任客席主廚,並於6月12日及15日呈獻「滬粵匯萃晚宴」;另設精選上海菜式於推廣期內晚市供應。
滬菜講究濃油赤醬,甜潤鮮美,慢火細工,真材實料,一絲不苟,而李耀雲為中國滬菜烹飪翹楚,屢獲中外廚藝評選大獎,且為世界中餐名廚交流協會會長,其超卓出品備受境內外食家同行一致讚賞。
推廣期內,李耀雲將連同其優秀廚師助手宣國民、陳軍於帝影樓為客人親自主理各式滬菜美饌,機會難逢,從速訂座。
帝影樓是新濠鋒的殿堂級中式餐廳,精於烹製粵式佳餚與地道美食。帝影樓集歷代傳統粵菜烹調技藝之大成,配合上乘材料,為新濠鋒的顧客巧手精製正宗粵式美食,此外亦供應多款新派粵式菜餚。帝影樓由屢獲殊榮的名廚主理,創製出多款特色美饌,包括蒜片腰果和牛丁及鮑魚荷葉飯等。
帝影樓設於新濠鋒大樓11樓,提供午市(11:00am – 4:00pm)與晚市(6pm – 10:30pm)餐飲選擇。顧客可使用新濠鋒電梯大堂旁的專用升降機直達帝影樓。該店設有免費代客泊車服務,惟須視乎供應情況而定。
於6月12日及15日之「滬粵匯萃晚宴」期間不提供精選上海菜式
李耀雲烹飪大師簡介
當前國內最負盛名的烹飪大師之一,是全國首批國家級烹飪大師,也擔任中國名廚聯誼會會長、上海烹飪協會副會長、中國烹飪協會常務理事,上海飲食行業協會技術顧問等職務。1999年成為中國僅有的兩位世廚聯國際評委之一,2000年被評為該年度全國十佳廚師。
2002年他應邀擔任香港舉行的“美食之最大賽''評委,並作廚藝表演,炮製“雪中送碳” 、“蒜椒桂魚” 、“松仁魚米” 菜式等,卓越的技藝被稱為“中國食神”。
1960年李耀雲畢業於上海烹調專科學校,1961年在上海行業技術比武中獲取“刀功全能”第一名,其後更多次摘取單項“整鴨出骨”桂冠。1972年與上海著名的“莫氏三兄弟”共事,與莫家傳人開拓了大批淮揚菜新品種,使揚州飯店在滬的聲譽日增。1983年參加全國第一屆名師操作鑒定會,並被評為“全國十佳優秀廚師”;同年參加了《中日菜譜》編寫,並應邀赴日本表演中國烹飪技藝,受到日本同行的廣泛讚譽,為促進中日廚藝文化的交流作出了極大的貢獻。
1985年李耀雲整理推出“莫家菜”,並與人合作編撰了影響深遠的《莫家菜譜》,被廣州中國大酒店邀請參加表演“莫家菜”,並在1984年、1985年先後兩次應邀赴新加坡參加烹飪技藝表演,精湛技藝轟動獅城。
1988年,李耀雲受中商部委派,擔任中國烹飪代表團隊長,率隊赴德國法蘭克福參加第十七屆世界奧林匹克烹飪大獎賽,該次烹飪大賽為國家奪得金牌七枚、銀牌一枚、銅牌一枚的好成績。1997年李耀雲應邀擔任俄羅斯中菜烹飪大賽評委和泰國曼谷亞洲中菜大賽評委,並受聘於新加坡五星級酒店——良木園大酒店,擔任該酒店的中菜顧問。
